Wine description
A 1,000-hectare estate, 82 of which are planted with vines, within a protected and magnificent natural park

A complex aromatic palette composed of citrus, white fruit and toasted hazelnut aromas, along with a freshness and minerality typical of La Clape wines
Since the 2017 vintage, the estate has been certified AB ( organic wine ) and DEMETER ( Biodynamic farming)

Best enjoyed at 11°C with pan-fried scallops, fish in sauce, or as an aperitif.
Winemaking and ageing
The harvest date is triggered, grape variety by grape variety, only when the grapes have reached optimal ripeness and after daily tasting of the berries. The hand-harvested grapes undergo pneumatic pressing as soon as they arrive at the winery. Alcoholic fermentation takes place 100% in French oak barrels. Temperature control preserves the freshness and integrity of the aromas. Barrel ageing lasts between 7 and 8 months until the Spring Equinox, with regular lees stirring (for two months).
Tasting note
Golden robe with a pale yellow hue. The nose is powerful and fresh, with aromas of citrus fruits, white-fleshed fruits such as pear and quince, scents of garrigue and anise, and notes of toasted hazelnuts. The palate shows great finesse and beautiful minerality, with iodine notes and hints of white pepper and flint. A very fresh finish with notes of acacia honey.
