Château de La Soujeole is ideally situated in the Malepère appellation to embody the frontier, but also the meeting point, between two climatic influences. The château, the westernmost in the Languedoc, lies very close to the Naurouze watershed. It therefore looks towards the Atlantic as much as towards the Mediterranean. Thus, at La Soujeole, Cabernet Franc accounts for half of the vine varieties, complemented by Merlot and Malbec. The hillside terroirs are cultivated using a mule in order to connect the realms of the animal, the mineral, the plant and the human.
The manual harvesting of the grapes takes place from the end of September through to the end of October. The grapes from the old Merlot vines are harvested first, then Malbec and finally Cabernet Franc, destined for the Grand Vin red.
After twelve months of ageing, the grape varieties are blended and the wine bottled on a fruit day. Here, the south turns towards the west and lays claim to subtle and powerful wines, magnified by the Cabernet Franc, which expresses itself in a unique way on this terroir.
This wine is best enjoyed with a cassoulet or a duck confit. This diet has made the reputation of the French Paradox.
