Dress

Nice density.

Nose

Reveals an elegant complexity: garrigue, Morello cherry, cocoa, sweet spices. Notes of liquorice, bay leaf, menthol and vanilla.

Ample, round, warm, gourmet, built on very refined, pleasant and velvety tannins, with a nice freshness in support.

Winemaking

The blend is made exclusively of grapes from organic vineyards where mechanical action is kept to a minimum.

The stripping takes place before the harvest and the grapes are picked when perfectly ripe to extract the maximum potential of each grape variety. The grapes are meticulously sorted during the harvest and on arrival at the cellar.

The grapes are destemmed and pressed before being put into vats. Each grape variety is vinified separately, the temperatures are controlled with precision to bring the maximum of aromas. We practice a gentle maceration to extract the maximum of the fruit and preserve the specificities of each grape variety. Once the malolactic fermentation is complete, the wine is aged in barrels for fifteen months.
