Winemaking and ageing
The harvest is triggered at full ripeness. Each plot is vinified separately with meticulous attention to detail and daily care given at the highest level to each stage. The grapes are vatted as whole bunches to undergo carbonic maceration in temperature-controlled tanks between 21 and 25°C, achieving the right balance of tannins, acidity and aromas.
During pressing, the free-run juice is separated and placed in various French oak barrels, with a nuanced selection of oaks from the Allier and the Vosges,
with light toasting. They then complete their fermentation, affirming their tannic character. The press juice is placed in clay amphorae, glass amphorae and bi-material ovoid tanks (stainless steel and wood). The
juices evolve here towards silkiness, roundness and richness.
In clay amphorae, the fruit and colour are affirmed. In glass tanks, without porosity, light nuances the
colours. In stainless steel and wood ovoid tanks, the suspended lees are in constant motion and the juices
express their richness and roundness.
Each juice completes its fermentation in the ageing cellar within its respective vessel, before being racked and then aged in the same vessels for several months (between 6 and 9 months). Thus, at the end of the ageing of the 3 grape varieties, sourced from 6 plots, with 4 ageing methods for the free-run and press juices, the blend is assembled on a fruit day with a splendid palette of nuances.
Tasting note
The complex nose blends notes of
garrigue, thyme, caramel and honey.
The palate is full and complex.
Spiced, fruity aromas of
apricot are found, along with floral notes
complemented by a harmonious
tannic structure.

Delivery costs depend on the delivery address, the number of bottles and the delivery option (mondial relay, express, standard, 24h, pallet...) and the price is calculated at the time of checkout.
Standard delivery is free in France from €125 and in other countries from €300 worth of orders.
