Wine description
This Cote des Roses cuvée celebrates the Art de Vivre Méditerranéen. The soil, highly varied, consists essentially of hard limestone from the garrigue, schist soils as well as gravel brought by the rivers and waterways of the Languedoc. The climate, warm and windy ("semi-arid Mediterranean climate with a mild winter variant") encourages the ripening of the grapes and their good condition, while retaining freshness thanks to the altitude and the effect of the sea, which tempers the high summer temperatures. Its bottle features a unique rose-shaped base, created by a young designer from the École Boulle. It is a wine to be offered like a bouquet of roses!

Winemaking and ageing
The different grape varieties are harvested separately with the aim of reaching optimum ripeness for each one. The winemaking processes are therefore adjusted to respect the specific characteristics of the grape varieties and the potential of the terroirs. Harvesting is mechanical with an on-board sorting machine. The grapes are destemmed, cooled to 8°C and sent to the press to extract the rosé must. Particular attention is paid to the pressing process so as to retain only the finest first-run juices. The juices are then settled to a greater or lesser degree depending on the desired aromatic profile. Fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. The distinctive feature of this winemaking lies in the attention paid to the colour and aromatic purity of the wines. Finally, after a light fining, bottling takes place relatively early in order to preserve the fresh and fruity character of the wines.
Tasting note
This cote des roses rosé is tender, pale and brilliant
with bluish highlights evolving over time towards
more orange hues. The nose offers aromas of
red fruits, blackcurrant and redcurrant. Floral
notes of rose and citrus notes,
grapefruit complete this palette. Fresh
finish with fruity notes. The palate is fresh,
indulgent and endowed with great aromatic
persistence and a beautiful balance.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.
