Wine description
The estate is located to the north-west of Montpellier, nestled at the gateway to the Causse du Larzac, at an altitude of between 150 and 350 metres over an area of 9.6 hectares. There are two distinct soil types: ruffes, a highly filtering soil rich in minerals, and a sandstone and schist soil, deeper, fractured and allowing the formation of a water reserve. This cuvée is the result of a single-plot selection; the vines are situated in a climatic zone with large temperature variations. The distance from the sea and the proximity of the Causse bring a certain freshness during summer nights, which is beneficial to the slow and progressive ripening of the berries.

Winemaking and ageing
The plots of the cuvée are the result of a plot-by-plot selection surrounding the Villa. They are situated at the top of the vineyard, on a very particular terroir of polyphonic schists of volcanic origin. The harvest is done by hand. The low-yielding vines are triggered on the basis of ripeness checks: analysis of polyphenols contained in the grape skins and daily tasting of the grapes as harvest approaches. The picking of healthy, ripe berries is an essential aspect of the process of crafting a great Cuvée. After harvest, the grapes are transported in the traditional manner in containers to the winery within the hour. Each grape variety is vinified separately and gentle pump-overs are carried out daily, guided by tastings. The duration of alcoholic fermentation is around 10–12 days. The wines are then drained and pressed, followed by malolactic fermentation. Ageing then continues in barrels for a period of 12 months.
Tasting note
This Cuvée has an intense red colour. The nose is clear, soft and silky with strawberry aromas. On the palate, a certain aromatic length is noted with a perfect balance. The attack is frank, accompanied by noble aromas of strawberry and garrigue.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.
