Wine description
Gérard Bertrand reveals the history of the great terroirs of the South of France. It was in 825 that the first written record of the Abbaye de Saint Hilaire was found. Located near Limoux, it is famous for having been home to the monks who discovered the secret of effervescence in
wines.
Winemaking and ageing
The grapes are hand-picked and the harvest is early, in order to preserve good acidity. Upon arrival at the winery, the fruit is immediately pressed using a pneumatic press.
The must is transferred into tanks for alcoholic
fermentation, using the same process as for still
wines. The wine is then transferred into sealed bottles for the second fermentation, according to the traditional method. Finally, the bottles are disgorged and the traditional dosage is very precise, in order to preserve all the freshness and balance of the wine.
Tasting note
This cuvée, composed of Chardonnay, complemented by Chenin and supported by a touch of Pinot Noir, presents a pale gold robe. It releases delicate and
complex aromas of white flowers (jasmine, lily), yellow lemon peel and white pepper. On the palate, this crémant blossoms from the first attack with frank notes of yellow peach in syrup and toasted almond. The lively attack quickly gives way to the breadth of toasted and brioche notes.

Gérard Bertrand has made his name one of the most dynamic brands in the French wine industry. While he claims to make wines from the South as an "art de vivre", he is first and foremost a meticulous and demanding winemaker, in pursuit of excellence across his 17 estates. This quest finds its fulfilment with Clos d'Ora, a magnificent cru on the heights of Livinière, and with a rosé from the Cabrières terroir, the cuvée Clos du Temple, which shines through its intense personality. Since 2002, he has been leading a large-scale conversion of his vineyard to organic and biodynamic farming, making it one of the most significant in France in terms of virtuous viticulture. All the estate wines are remarkable.
