The wines are harvested when perfectly ripe. To achieve this, regular berry tastings are carried out before the harvest.
The grapes are harvested by hand and destemmed on arrival at the winery. Vinification is traditional, and the grapes are macerated "on grain", i.e. before pressing (addition of wine alcohol to the must to block fermentation).
This technique can only be used if the harvest is of the highest quality. A long vatting period (around 30 days) is followed by gentle pressing in a pneumatic press to obtain only the best juice.
The wines are matured in barrels of various capacities (225 or 350 liters) for 1 year. Finally, the wine is bottle-aged in an underground cellar for 12 months.
