Winemaking

The harvest begins when the grapes have completely reached maturity. Harvested manually, the berries are separated from the stalks (destemming) before being put into vats for a traditional maceration of 10 to 15 days. Pumping over and aging extract the “best” from the skins before pressing. Part of the wine is aged 10 months in barrels before bottling.
