Wine description
The Rivesaltes appellation takes its name from the town of Rivesaltes, which means "High Banks" in Catalan. Crossed by 3 rivers — the Agly, the Têt and the Tech — which have shaped a landscape of terraced slopes and hills, the Rivesaltes vineyard covers extremely varied soils.
The vineyard consists of numerous small terraced plots situated on the slopes of the natural geological cirque in which the historically rich village of Tautavel is located.

Best served at 10°C, as an aperitif with Roquefort or strongly flavoured cheeses.
Winemaking and ageing
The grapes are harvested at full ripeness and then pressed directly upon arrival at the winery. A cold settling and a 48-hour rest of the must are carried out, after which alcoholic fermentation takes place at low temperature in a temperature-controlled stainless steel vat.
The distinctive feature of this wine is the "mutage" (the addition of alcohol to the must), which stops the fermentation process. The result is a wine whose sweetness is natural; it comes from the sugars, derived from the grapes, that have not fully fermented. The wine is bottled in spring.
Tasting note
The colour is golden yellow, the nose reveals notes of
candied fruits. On the palate, this cuvée reveals aromas
of orange marmalade and Corinth raisins, it is
balanced, with a fruity attack that evolves into
a long finish marked by muscat notes.
