Wine description
- Ideally situated in a natural corridor 17 km long between the Corbières mountain range and the first foothills of the Pyrenean massif, Maury is, by virtue of its terroir alone, an exceptional wine.
- The sun, a fundamental element of the Mediterranean climate, which shines 280 days a year, is one of the qualitative characteristics in the making of Maury.
- The low yield (27 hl/ha) is a guarantee of its quality.

Winemaking and ageing
The wines are harvested when they are at perfect ripeness. To achieve this, regular tastings of the berries are carried out before the harvest.
The harvest is done by hand and the grapes are destemmed upon arrival at the winery. The winemaking is traditional and the mutage is carried out "on the grain", that is to say before pressing (addition of wine-based alcohol to the must in order to stop fermentation).
This technique can only be carried out if the harvest is of high quality. The maceration is long (approximately 30 days), then a delicate pressing is performed in a pneumatic press in order to obtain only the finest juices.
The wines are aged in barrels of different capacities (225 or 350 litres) for 1 year. Finally, a bottle refinement is carried out in an underground cellar for 12 months.
Tasting note
The colour is deep with violet hues.
Powerful nose of black fruits (blackberry, blackcurrant) and
prunes.
A very refined palate with good length and a
spiced finish. Notes of "stewed" fruits with very
fine vivacity.
Storage
Keep away from sunlight and at a constant temperature
