Wine description
KOSMOS was born from a deep conviction: every
terroir possesses a singular energy. This cuvée is a
blend from all our estates cultivated in
biodynamics: Château l'Hospitalet, Château de Villemajou,
Château La Sauvageonne, Château de la Soujeole, Château
Laville Bertrou, Castellum, Cigalus, and Domaine de l'Aigle.
This wine expresses the harmony between different places yet
united by the same quest: to sublimate the living. It also carries
the spirit of Antoine de Saint-Exupéry, whose vision of the
sky, of travel and of the invisible inspires us to connect our lands
as he connected worlds.
Food & Wine pairings suggested by our chef
Best enjoyed at 16°C with seafood, grilled or lightly sauced fish, summer salads, dishes based on crunchy vegetables, or fresh cheeses.
Winemaking and ageing
The grapes are harvested by hand early in the morning, in order to preserve the freshness and aromatic expression of the fruit. They are immediately placed in a cold room, then pressed the following morning. After pressing, the juices undergo cold settling for 24 hours, promoting clarity and aromatic finesse. The clear juices
are then transferred to a vat to begin alcoholic fermentation. At mid-fermentation, the wines are barrelled into casks to complete their fermentation. They then continue their ageing in barrels for six months, with regular lees stirring until the spring equinox. At the end of this period, the wines are tasted, blended and then bottled.
Tasting note
The colour is clear and bright. This cuvée develops a fresh and fruity aromatic profile, revealing notes of citrus, white flowers, as well as a lovely roundness on the palate and
a crisp finish carried by a beautiful liveliness.
