Wine description
KOSMOS was born from a deep conviction: every terroir possesses a unique energy. This cuvée is a blend of all our estates cultivated biodynamically: Château l’Hospitalet, Château de Villemajou, Château La Sauvageonne, Château de la Soujeole, Château Laville Bertrou, Castellum, Cigalus, and Domaine de l’Aigle. This wine expresses the harmony between different places, connected by the same quest: to enhance the living world. It also extends the spirit of Antoine de Saint-Exupéry, whose vision of the sky, travel and the invisible inspires us to connect our lands as he connected worlds.

Winemaking and ageing
The grapes, harvested by hand at perfect ripeness, undergo rigorous sorting before being vatted separately according to grape variety. The Carignan is vinified by carbonic maceration, in order to preserve the freshness of the fruit, the aromatic richness and the suppleness of the tannins. The other varieties are destemmed and then vinified by traditional maceration for approximately three weeks, with light, controlled pump-overs throughout the alcoholic fermentation, with the aim of encouraging a gentle and balanced extraction. Following malolactic fermentation, the wines are tasted and then blended before being aged in barrels for 12 months, of which 30% is new oak. This ageing brings complexity and structure whilst respecting the identity of the wine. Bottling takes place after this ageing, without haste, in order to guarantee harmony and ageing potential.
Tasting note
Intense and deep colour. The nose, expressive and aromatic, reveals beautiful fruity notes. On the palate, the attack is ample and round, offering a fine balance. The aromas of dark fruits and red fruits linger harmoniously, supported by an elegant structure imparted by barrel ageing, which lends depth and length to the whole.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.
The alcohol content (% vol.) varies by cuvée and vintage; it is listed in the product’s technical data sheet, below the description.
The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.

We do not produce dealcoholised wine. However, our range offers wines with lower alcohol content: So'Vive (naturally low-alcohol organic white wine), Le Chouchou (light red wine) and Cote des Roses Red Léger. The precise alcohol content of each cuvée is indicated on its product sheet.
