Description du vin
The first traces of the Occitan language date back to around the year 940 in literary texts such as the poem "La Passion de Clermont". It subsequently became an Occitan language, a European culture carried by the Troubadour movement in the Middle Ages.
Vinification et élevage
The grapes are harvested at perfect ripeness in order to express the optimal potential of the variety. A meticulous sorting of the harvest is carried out at picking and upon reception of the grapes. The grapes are destemmed and chilled to 8°C. A skin maceration of 12 to 24 hours is then carried out in order to extract the aromatic compounds from the skins and pulp. The grapes are then sent to the press to extract the must. Particular attention is paid to the pressing so as to retain only the finest first-run juices. The juices are then settled to a greater or lesser degree depending on the desired aromatic profile. Fermentations last between 15 and over 30 days depending on the degree of clarification and the temperature applied. The distinctive feature of this variety lies in its great aromatic richness and its very stable aromas with regard to oxidative phenomena. Finally, after a light fining, bottling takes place relatively early in order to preserve the fresh and fruity character of the wines.

Ripe pear comes through on the nose, accompanied by subtle hints of honeysuckle. On the palate, its rich and generous texture caresses the palate, showcasing intense flavours of ripe pear, peach, apricot, orange blossom, citrus and a delicate touch of oak. The finish is harmoniously balanced, leaving a gentle mineral impression that lingers pleasantly on the palate.
