Gérard Bertrand révèle l’histoire des grands terroirs du Sud de la France.
C’est en 825 que l’on trouve la première trace écrite de l’Abbaye de Saint Hilaire. Située près de Limoux, elle est célèbre pour avoir abrité les moines qui ont découvert le secret de l’effervescence des vins.

Perfect as an aperitif, served at 10°C, it also pairs very
well with goat's cheeses
(Cabécou, Pélardon, Rocamadour…) and
sweet desserts.

The colour is golden yellow.
The nose is complex and aromatic, with
white flowers. There are hints
of honey, green apple and toasted bread.
Elegant and crisp on the palate,
naturally enhanced by the fine
texture of the bubbles.
