Wine description
In 1886, even as Baron Haussmann's architecture was beautifying cities, a legend was reborn: that of Mirmanda, the Celtic city populated by enchanting fairies, in a poem called 'Canigou' evoking the mountain dominating the vineyard of the Côtes du Roussillon Villages Les Aspres appellation.

Winemaking and ageing
The work begins in the vineyard with a selection of the plots best suited to producing this type of wine. The grapes are harvested largely by hand. A double sorting system is carried out in the vineyard and in the cellar. The winemaking is traditional and the grapes are therefore destemmed before the maceration phase begins, which lasts between 3 and 4 weeks.
A pressing is carried out, followed by malolactic fermentation. Two thirds of the wines are aged for 9 months in barrels, with the remainder kept in tank to be blended in spring. After a light fining, the wines are bottled and kept for several months before release.
Tasting note
The robe is an intense garnet with violet highlights.
This wine opens on beautiful cherry fruit with
notes of liquorice and fine oak.
On the palate, grey pepper and nutmeg
accompany a firm yet supple tannic structure
that brings great breadth.
A generous and full palate with a
persistent finish.
