Wine description
The year 1650 marks the height of the maritime wine trade initiated by the Greeks, who from antiquity made the port of Narbonne — protected by the island of the Clape massif — a great centre of vine cultivation.

Best enjoyed at 11°C with pan-fried scallops, fish in sauce, or as an aperitif.
Winemaking and ageing
Slow ripening and late harvesting (from late September to mid-October) are the secrets to obtaining ripe, healthy and concentrated grapes. This also promotes the extraction of colour and aromas during the fermentation and maceration phases. The grapes are harvested by hand and transported to the cellar in harvest bins. The grapes are destemmed, then placed in stainless steel vats for macerations of around 20 to 25 days. The wines are then racked and placed in barrels for a period of 8 months.
Tasting note
It is a citrusy wine with minerality and a remarkable freshness partly inherited from its proximity to the sea.
