Wine description
Cigalus blanc 2025:
The Cigalus estate benefits from a Mediterranean climate ("semi-arid with a temperate spring variant"), warm and sunny, allowing advanced ripening of all grape varieties. The estate is farmed using biodynamics.
Tasting Notes:
Golden yellow robe, brilliant and clear. Intense and complex nose of ripe citrus fruits (grapefruit), white peach, honey, dried fruit with a toasted note. Full and silky palate, ripe and ample with notes of vanilla, toast, butter and exotic fruits. Beautiful length on the palate.
Domaine de l'Aigle Chardonnay 2024:
Domaine de l'Aigle is located near the village of Roquetaillade, close to Limoux, at the foot of the Pyrenees. The estate covers some 47 hectares, with vines planted between 250 and 500 metres above sea level, making it one of the highest vineyards in the Haute Vallée de l'Aude, and indeed in the Languedoc. The chardonnay vines thrive in climatic conditions similar to those of Burgundy, from where the grape originates; an oceanic climate with continental influences, frequent rainfall and a wide range of temperatures. Domaine de l'Aigle produces wines from the Languedoc-Roussillon of surprising freshness and exceptional minerality. The estate began its conversion to biodynamic methods in 2014.
Tasting Notes:
A golden green robe with silvery grey reflections. Expressive nose with fruity notes of white peach, opening onto notes of almond paste and pastry. The palate is fresh, mineral, light and supple with a mentholated finish.
Château l'Hospitalet grands vin blanc 2024:
On the edge of the coastline, Château de l'Hospitalet overlooks the Mediterranean from a height of around one hundred metres. Benefiting from a semi-arid Mediterranean climate with a mild winter variant, the vineyard enjoys exceptional climatic conditions: both in terms of sunshine duration, the quantities of heat stored during the day by the limestone and released at night to the grapes, and through the effect of the Mediterranean Sea which moderates temperature variations, and the altitude which attenuates the summer heat. Two soil types contribute to the aromatic complexity, finesse and elegance of this cuvée: the marly-calcareous soils of the Gargasian, at the foot of the cliff, rich in fossils, provide the vines with a water supply throughout the summer despite the absence of summer rainfall; and the red Mediterranean soils of the Barremian, formed on compact blue-grey limestone reclaimed from the garrigue, allow the production of rich and concentrated wines. The grapes come from sustainable farming, in keeping with the Demeter biodynamic approach.
Tasting Notes:
Golden robe, pale yellow. The nose is powerful and fresh with aromas of citrus fruits, white-fleshed fruits such as pear and quince, scents of garrigue and anise, with notes of roasted hazelnuts. The palate is of great finesse and beautiful minerality, with iodine notes and hints of white pepper and flint. Plenty of freshness on the finish with notes of acacia honey.

Cigalus: Best enjoyed at 10–12°C with pan-fried scallops, fish in sauce, or as an aperitif. Domaine de l'aigle Chardonnay: Best served between 12 and 13°C, with roast poultry, fish or seafood in sauce, mushrooms in sauce, cheese, or goat's cheese tarts.
Château l'Hospitalet grand vin blanc: Best enjoyed at 11°C with pan-fried scallops, fish in sauce, or as an aperitif.
