Wine description
- One of the highest-altitude estates in Languedoc Roussillon
- A terroir (soil and climate) similar to that of Burgundy
- A delicate Chardonnay (grape variety), aromatically intense (influenced by the Languedoc climate) and structured (oak-aged)
- The estate has been farmed using biodynamic agriculture certified Demeter since the 2018 vintage.

Best served between 12 and 13°C, with roasted
poultry, fish or seafood in sauce, mushrooms in
sauce, cheese or goat's cheese tarts.
Winemaking and ageing
The vine density is high, 5,000 to 6,000 vines per hectare, which allows vigour to be controlled and quality wines to be obtained. The vines are trained on trellises in order to generate an optimal leaf surface area for the ripening of the grapes. The manual harvest is triggered as soon as optimal ripeness is reached. The juice is immediately extracted by a delicate pneumatic pressing that guarantees the quality of the musts. After settling, alcoholic fermentation is carried out. The wine is aged on fine lees and in new French oak barrels (100%) for 6 to 8 months. Malolactic fermentation is carried out in certain barrels.
Tasting note
A golden green robe with silvery grey reflections. Expressive
nose with fruity notes of white peach,
opening onto notes of marzipan and pastry.
The palate is fresh, mineral, light and supple with a
menthol finish.
