On the edge of the coastline, Château de l'Hospitalet overlooks the Mediterranean. Benefiting from a semi-arid Mediterranean climate with a mild winter variant, the vineyard enjoys exceptional climatic conditions, both in terms of sunshine duration, the quantities of heat stored during the day by the limestone and released at night to the grapes, and the effect of the Mediterranean Sea, which moderates temperature variations, and the altitude, which tempers the summer heat. Two soil types contribute to the generosity, aromatic complexity, freshness and vibrancy of this cuvée: the marl-limestone soils of the Gargasian, at the foot of the cliff, rich in fossils, which provide the vines with a water supply throughout the summer despite the absence of summer rainfall; and the red Mediterranean soils of the Barremian, formed on compact bluish-grey limestone reclaimed from the garrigue, allowing the production of rich and concentrated wines. This vineyard was designed to achieve an optimum level of quality: the selection of vine stocks at planting, the North-South orientation of the rows for better light capture, and quality pruning using the trellised Cordon de Royat method. Yields are moderate, between 35 and 40 hl/ha, and the grapes are ripe, healthy and concentrated, allowing easy extraction of colour and aromas during fermentation and maceration, thanks to slow ripening. The grapes are harvested by hand and transported to the winery in small containers. A portion of the Syrah is vinified using carbonic maceration. The Grenache, Mourvèdre and Carignan are destemmed and placed in temperature-controlled stainless steel vats for traditional macerations of 20 to 25 days. The different grape varieties are vinified separately. At the end of winter, the wines are racked, blended and placed in 225-litre barrels in the barrel cellar of Château l'Hospitalet for 12 months.
