Wine description
Château la Sauvageonne is a legendary estate. Its exceptional exposure, location and terroir give it a unique character. The plots are situated in the north-central part of the Hérault, backed by the ridges of the Causse du Larzac. This climatic zone experiences wide temperature variations due to its distance from the sea and the proximity of the Causse, which brings a certain freshness during summer nights, beneficial for a slow and gradual ripening of the berries.

Winemaking and ageing
Harvest is triggered on the basis of ripeness checks, analysis of polyphenols contained in the grape skins, and daily tasting of the grapes as harvest approaches. Picking healthy, ripe grapes is the essential step in achieving a high level of quality. The harvest is done by hand; the grapes are taken in containers to the winery within the hour and then sorted. A portion of the Syrah is vinified as whole bunches using the carbonic maceration method. The Grenache is destemmed before being placed in temperature-controlled vats for traditional maceration. A tiny quantity of Carignan from one of the most qualitative plots is added to the blend. Each grape variety is vinified separately. The maceration period is around 20 to 25 days. At the end of winter, the wines are transferred into new 225-litre barrels for a period of between 12 and 16 months.
Tasting note
The colour is ruby with intense, slightly brick-tinged reflections. A nose of garrigue, jammy and spiced, reveals subtle notes of black fruits and gingerbread. On the palate, the Cuvée Les Ruffes presents aromas of well-ripened black fruits, with fine, elegant tannins that form a beautiful balance with the wine's freshness.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
