Winemaking and ageing
Harvesting is carried out by hand and the different grape varieties are picked separately. The grapes are cooled to 8°C and immediately pressed gently in order to extract the finest juices. Fermentation takes place at controlled temperatures and lasts around 2 weeks. Mid-way through fermentation, part of the must is transferred to new French oak barrels for 6 months. The wine is then aged on fine lees with regular stirring (bâtonnage).
Tasting note
The colour is a beautiful golden hue. The nose is
very complex and extremely fragrant, revealing aromas
of hawthorn, almond and floral notes of violet
and yellow fruits of mango and apricot. The
oaky side of this cuvée is very delicate with notes
of gingerbread and tobacco. The palate is rich and
smooth with a great deal of body, amplitude and a
beautiful freshness.
