Winemaking and ageing
Ballerine comes from the Limoux region, an exceptional terroir for the production of sparkling wines that first came to light at the Abbey of Saint Hilaire in 1531. This terroir is situated at altitude, close to the Pyrenees mountain range, and lends this brut rosé its airy character. The vinification and blending of Ballerine, made primarily from Chardonnay and Pinot Noir, place great emphasis on the freshness and tension of this wine, and evoke the lightness of the ballerina.
Tasting note
The colour of the delicate pale robe pays tribute to that
of the sunsets one can admire from the rooftops
of the Opéra Garnier in Paris. Radiant, it is adorned with
golden highlights. The delicate bubbles lend this crémant
a persistent mousse. The nose, powerful and straight, reveals
subtle and indulgent aromas; one perceives notes of red
fruits and white flowers. The attack on the palate is precise
and elegant, the aromas are of great complexity. Brioche
notes mingle with fruity notes of strawberry and
raspberry. The finish lingers on soft and
creamy notes.
