300 g flour
180 g brown sugar
4 eggs
250 ml rapeseed oil
330 g grated carrots
0.75 tablespoon natural vanilla extract
0.75 tablespoon cinnamon
1.5 teaspoon bicarbonate of soda
0.75 teaspoon baking powder
1 teaspoon salt
0.33 teaspoon nutmeg
80 g crushed walnuts for decoration
Preheat the oven to 170°C conventional heat.
Start by buttering and flouring a round tin 15 cm in diameter.
In a bowl, mix the oil and brown sugar. Add the eggs one by one and the vanilla.
Separately, mix the dry ingredients (flour, cinnamon, nutmeg, baking powder and bicarbonate of soda).
Gradually pour the dry ingredients into the wet ingredients. Mix until combined.
Add the grated carrots and crushed walnuts, mix one final time.
Bake for approximately 30 minutes (check doneness with a wooden skewer). Leave to cool and turn out onto a wire rack.
