Wine & food pairing: domaine de l'aigle pinot noir & rabbit
The Domaine de l'Aigle, located near the village of Roquetaillade, close to Limoux at the foot of the Pyrenees, is a 31-hectare property sitting between 250 and 500 metres in altitude, making it one of the highest vineyards in the Haute Vallée de l'Aude and in the whole of the Languedoc.
The vines planted with Pinot Noir find climatic conditions close to those of their native Burgundy, with an oceanic and semi-continental climate featuring regular rainfall.
The Domaine de l'Aigle Pinot Noir reveals aromas of small berry fruits (raspberry, redcurrant). Tender, fruity and finely spiced, it reveals fine and silky tannins as well as an exceptional structure on the palate. The finish is long and fruity.
It is an ideal wine to accompany grilled meats, particularly rabbit.
