AOP Côtes du Roussillon Les Aspres
The richness of the great terroirs of southern France, combining tradition and precision
The work begins in the vineyard, with a selection of the plots best suited to producing this type of wine. Most of the grapes are harvested by hand. A double sorting system is used both in the vineyard and in the cellar. Vinification is traditional, and the grapes are destemmed before the maceration phase, which lasts between 3 and 4 weeks.
After pressing, the wine undergoes malolactic fermentation. Two-thirds of the wines are aged for 9 months in barrels, with the remainder kept in vats for blending in the spring. After light fining, the wines are bottled and stored for several months before release.
