The richness of the great terroirs of southern France, combining tradition and precision
Harvesting takes place early in the morning, when temperatures are at their lowest, to preserve the integrity of the aromas. The grapes are quickly transported to the winery, and the juice is immediately extracted by gentle pneumatic pressing. After cold settling, fermentation begins, with temperatures regulated between 14 and 17°C. After about 15 days of fermentation, the wine is racked and aged.
