Custody and Service Tips
Ideal at 10-12°C as an aperitif, with grilled fish or white meat.
The harvest takes place early in the morning, when the temperature is lowest, in order to preserve the integrity of the aromas. The grapes are quickly transported to the cellar and the juice is immediately extracted by delicate pneumatic pressing. After cold settling, fermentation begins and temperatures are regulated between 14 and 17°C. After fermentation for about 15 days, the wine is racked and aged.
