Cigalus White 2020 - Wooden Case 6 bottles

Biodynamics puts the energy of the soil at the heart of the process. Operations in the vineyard (pruning, plowing, etc.) and in the cellar are governed by a calendar established according to two main stars: the moon and the sun. The vine is in balance with the soil and fully expresses our terroir in the wines. The grapes harvested by hand are pneumatically pressed as soon as they arrive at the cellar. After the alcoholic fermentation, 70% of the wine is aged in new French oak barrels for 7 to 8 months with regular stirring until the Spring Equinox.
