According to historians, the celebration of Candlemas or "candle festivals" has pagan roots in an ancient fertility cult. The event was held in a cave in Rome in mid-February, at the time of the first sowing, to celebrate Saturn around the winter solstice.

According to popular belief, farmers walked the fields carrying torches to purify the soil before sowing. It was also said that the year's flour would be lost if it wasn't used to make pancakes at Chandeleur. Eating pancakes is therefore a tribute to the rebirth of nature, the cycle of the seasons and, more specifically, the coming of spring. 

Numerous pancake traditions have sprung up, particularly in France. One of them involves holding a golden louis in one hand and flipping a crêpe over, throwing it into the air from the frying pan. An elegant, unfolded return of the dough would bode well for the household's finances. The most superstitious will keep the first crêpe in a cupboard, where it will attract good luck.

For us, Chandeleur is a time for family get-togethers around Mom's pancakes. And what could be more appropriate than to open a bottle of Ballerine. Its delicate allure and aromas of red fruits, brioche and flowers will go perfectly with your crêpes, whatever the recipe.
