- The sun, a fundamental element of the Mediterranean climate, which shines 280 days a year, is one of the qualitative characteristics of the production of Maury.
- The low yield (27 hl/ha) is a guarantee of its quality.

Serve with Roquefort, a fresh fruit salad, gingerbread or pastries.
The wines are harvested when they are perfectly ripe. For this, regular tastings of the berries are done before the harvest.
The harvest is manual and the grapes are de-stemmed when they arrive at the cellar. The vinification is traditional and the mutage is carried out "on grain", that is to say before pressing (addition of alcohol of vinous origin in the must in order to block the fermentation).
This technique can only be carried out if the harvest is of high quality. The vatting is long (about 30 days), then delicate pressing is carried out in a pneumatic press in order to obtain only the best juices.
The wines are aged in barrels of different capacities (225 or 350 liters ) for 1 year. Finally, we carry out a refining in the bottle in an underground cellar for 12 months.
