Déjà reconnu avant le règne du Louis XIV, c’est en 1618 que le botaniste Magnol dans son livre Sylve Plantarium signale le Piquepoul parmi les cépages les plus réputés du Languedoc. Ce terroir calcaire bordant la mer Méditerranée, offre un vin blanc frais et sec.

This wine pairs wonderfully with shellfish (Charentaise mussel stew, stuffed clams) and crustaceans, but also with fish (pan-fried eels, Sète-style rouille)...
Vinification et élevage
To minimise the risk of oxidation, the grapes are harvested at the coolest time of day (night and early morning) and transported to the winery as quickly as possible. The bunches are immediately pressed in a pneumatic press. The must is then fermented at a low temperature (16 and 18°) to preserve the aromas as much as possible. The wine is aged in stainless steel tanks on fine lees before being bottled in spring.
Note de dégustation
The colour is pale yellow with green highlights. The nose delivers a rich bouquet of citrus and hawthorn notes.
The palate is fresh and indulgent, with beautiful lemony flavours and an invigorating finish.
