Cette cuvée Cote des Roses célèbre l’Art de Vivre Méditerranéen. Le sol, très varié, est constitué essentiellement de calcaire dur des garrigues, de sols schisteux mais aussi de graves apportées par les fleuves et les rivières du Languedoc. Le climat, chaud et venté (« climat méditerranéen semi aride à variante hivernale douce ») favorise la maturation des raisins et leur bon état sanitaire, tout en conservant de la fraîcheur grâce à l’altitude et à l’effet de la mer, qui atténue les températures élevées estivales. Sa bouteille est inédite au fond en forme de rose, créée par une jeune designer de l’Ecole Boulle. C’est un vin qui s’offre comme un bouquet de Rose !

Vinification et élevage
The grapes are harvested at perfect ripeness in order to express the optimal potential of the grape variety. A meticulous sorting of the harvest is carried out at picking and upon reception of the grapes. The work on the grapes takes place under neutral gas to minimise the risk of oxidation of the musts. The grapes are destemmed, cooled to 8°C and sent to the press to extract the must. Particular attention is paid to the pressing so as to retain only the finest first-run juices. The juices are then settled to a greater or lesser degree depending on the desired aromatic profile. Fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. Part of the wine is vinified and then aged in 225-litre Bordeaux barrels for approximately 4 months, whilst the remainder is vinified in temperature-controlled stainless steel vats at low temperature, in order to preserve the freshness and integrity of the aromas. The distinctive character of this grape variety lies in the nobility of its aromas and the delicacy of its wines. Finally, after a light fining, bottling takes place fairly early in order to preserve the fresh and fruity character of the wines.

This cuvée has a beautiful pale robe with
slightly golden highlights.
The nose develops aromas of mango, dried fruits
of almond and hazelnut, as well as notes
of citrus, grapefruit and orange blossom.
On the palate, the barrel ageing brings
aromas of vanilla, cinnamon, fresh butter and
spices. The finish is marked by a beautiful
minerality and a good length.
