This ancestral grape variety is harvested in the morning between 5 and 8 a.m. to preserve its freshness. Harvesting takes place from early to late September, by plot-by-plot selection. The grapes are placed directly in the press and pressed under neutral gas to preserve their aromatic freshness. Only the first juices are selected. Fermentation is stopped by the cold, at a controlled temperature between 13°C and 15°C, to reach 12 grams of sugar.
