Gérard Bertrand and his teams announce the opening of the brand new restaurant Chez Paule: traditional cuisine concocted over a wood fire, in a setting with the charms of yesteryear, accompanied by wines of the great terroirs of the region.

Being born on January 1st, 1900 undoubtedly predestined Grandmother Paule Bertrand to an extraordinary life! She crossed the 20th century with bravery raising nine children. She acquired land and planted vines there to produce wine. She cooked with love all her life for large family tables and left a legacy a precious notebook of stories and… of recipes that inspire the menu today of the new restaurant that pays homage to him.

Heritage Languedoc dishes

Interpreted up to date by Chef Laurent Chabert, Paule's recipes reek of the traditions of the entire region and are cooked in the restaurant's large fireplace, over a wood fire or in casseroles. The menu follows the seasons and the suggestion of the day is decided each morning according to the market. The wine list guides guests to discover the great terroirs and appellations of Languedoc Roussillon. The decor of wood, stone and antique objects invites you to savor our traditions as much as the benefits of the present time.
