Chez paule: the taste of authenticity and old-world charm

Gérard Bertrand and his teams announce the opening of the brand-new restaurant Chez Paule: traditional cuisine prepared over a wood fire, in a setting full of old-world charm, accompanied by wines from the great terroirs of the region.

Being born on 1^st January 1900 undoubtedly predestined grandmother Paule Bertrand to an extraordinary life! She indeed traversed the 20^th century with bravery, raising nine children. She acquired land and planted vines to produce wine. She cooked with love all her life for large family gatherings and left as héritage a precious notebook of stories and… recipes that inspire today the menu of the new restaurant paying tribute to her.

Reinterpreted for today's tastes by Chef Laurent Chabert, Paule's recipes carry the fragrance of traditions from across the region and are cooked in the restaurant's large fireplace, over a wood fire or in casserole dishes. The menu follows the seasons and the daily special is decided each morning according to the market. The wine list guides guests in discovering the great terroirs and appellations of Languedoc Roussillon. The décor of wood, stone and vintage objects invites guests to savour our traditions as much as the pleasures of the present day.

Open Tuesday to Saturday, lunch and dinner, and Sunday and Monday lunchtime, at Château l'Hospitalet, in Narbonne.
