250 g tapioca flour
200 ml whole milk
30 g butter
125 g grated Parmesan cheese
2 eggs
1/2 tablespoon salt

Preheat oven to 200°. Bring the milk, butter and salt to the boil, then pour the tapioca into the bowl of your mixer fitted with the hook and cover with the boiling milk. Mix with a wooden spoon until the tapioca absorbs the liquid. Add the eggs and Parmesan and knead for about 10 minutes. Once the dough is homogeneous, knead it by hand for a few minutes until it forms a compact ball. Using your hands, shape the dough into walnut-sized balls and place on a baking sheet or oven rack lined with parchment paper. Finally, bake for 23-25 minutes (until nicely colored). Serve immediately!
