AOP Limoux
A tender, expressive wine with a long, finely spiced finish.
The vines are carefully tended, with frequent manual intervention (pruning, disbudding, leaf thinning, thinning out, manual sorting of the grapes), in accordance with environmentally-friendly practices. The vineyard is espaliered, to generate optimum leaf area for grape ripening. The vines are planted at a relatively high density of 5,000 to 6,000 vines/ha, allowing optimum control of vigor. The care taken in the vineyard is aimed at obtaining a healthy harvest with moderate yields, allowing the grapes to reach their full potential in terms of quality. The harvest date is not set until the grapes have reached optimum ripeness. The grapes are harvested by hand and pneumatically pressed at low pressure into whole grapes as soon as they arrive at the winery. After a light cold static settling, the musts begin their alcoholic fermentation in vats, then are rapidly racked to new barrels at mid-fermentation. Malolactic fermentation is carried out according to the characteristics of the vintage. Barrel ageing lasts 7 to 8 months (until the Spring equinox), with regular stirring of the lees. After light fining, the wine is bottled unfiltered. The wine is aged in bottle for several months before release.
