AOP Picpoul de Pinet
The richness of the great terroirs of southern France, combining tradition and precision
Already recognized before the reign of Louis XIV, it was in 1618 that the botanist Magnol, in his book Sylve Plantarium, listed Piquepoul as one of Languedoc's most famous grape varieties. This limestone terroir bordering the Mediterranean Sea produces a fresh, dry white wine.
To minimize the risk of oxidation, the grapes are harvested at the coolest time of day (night and early morning) and transported to the cellar as quickly as possible. The grapes are immediately pressed in a pneumatic press.
The must is then fermented at a low temperature (16°-18°) to preserve as many aromas as possible. The wine is aged in stainless steel tanks on fine lees, before being bottled in the spring.
