AOP Languedoc Pic Saint Loup

On their return from conquest in 1189, three knights Guiral, Alban and Loup, in love with Princess Bertrade Bertrade, decide to become hermits, each on a mountain to make themselves hermits, each on a mountain, and to light a fire fire every year to celebrate the fair maiden. The peak was thus named Pic Saint Loup.
The work begins in the vineyard with a selection of the plots best suited to producing this type of wine.
Most of the grapes are harvested by hand. A double sorting system is used both in the vineyard and in the cellar.
Vinification is traditional, so the grapes are destemmed before the maceration phase begins, which lasts between 3 and 4 weeks. The grapes are then pressed, followed by malolactic fermentation. A third of the wine is aged for 9 months in barrels, with the remainder kept in vats.
