In the Middle Ages, Castellum referred to the central castle Castrum, a fortified village high up in the Languedoc region. The name of this cuvée evokes the fortifications of the Cité de Carcassonne, a UNESCO World Heritage site.

We are fortunate to have a plot of mature Sauvignon grapes (15 years old) on the clay-limestone plateau of Domaine de l'Estagnère, planted at perfect density (5,000 vines/ha) and with high-quality trellising to ensure a good leaf surface, which is the driving force behind photosynthesis and grape ripening. The oceanic influence provides a cooler climate, preserving Sauvignon aromas that are sensitive to heat. Gérard Bertrand and I saw the opportunity and potential to create this exceptional cuvée. Technical choices such as avoiding leaf thinning to keep the grapes protected from the sun, as well as the choice of biodynamic applications, give this great Sauvignon a full expression of both grape variety and terroir, with exceptional minerality and freshness. The first vintage for this 100% Sauvignon Blanc cuvée, 2/3 of which is aged for 8 months in oak barrels, will rival its international counterparts.

A great Sauvignon Blanc with intense aromas of exotic fruit and flint, and a fine acidity worthy of the greatest Sauvignons. 2022 is a vintage already rated as one of the greatest of the last 50 years, with ideal weather and perfect balance.
