This Cote des Roses cuvée celebrates the MediterraneanArt de Vivre . The soil, which is highly varied, consists mainly of the hard limestone of the garrigues, schistose soils and gravels brought in by the rivers of the Languedoc. The warm, windy climate ("semi-arid Mediterranean climate with mild winter variations") favors grape ripening and good health, while retaining coolness thanks to the altitude and the effect of the sea, which mitigates the high summer temperatures. The bottle, with its rose-shaped base, was created by a young designer from the Ecole Boulle. It's a wine to be offered like a bouquet of roses!
The different grape varieties are harvested separately, with the aim of achieving optimum ripeness for each. The vinification process is designed to respect the specific characteristics of each grape variety and the capacity of the terroir. Harvesting is mechanical, with on-board sorting. The grapes are destemmed, cooled to 8°C and sent to the press to extract the rosé must. Particular care is taken during pressing to ensure that only the highest-quality first juices are retained. The juices are then settled to a greater or lesser extent, depending on the desired aromatic profile. Fermentation lasts between 15 and 30 days, depending on the degree of clarification and temperature applied. The particularity of these vinifications lies in the attention paid to the color and aromatic purity of the wines. Finally, after light fining, the wine is bottled fairly early to preserve its fresh, fruity character.
