A tender, expressive wine with a long, finely spiced finish.
The grapes are harvested by hand in small crates and, after de-stemming, vatted by gravity. Cuvaison (fermentation and maceration) lasts 20 days in open vats, with punching of the cap twice a day at the beginning of the cuvaison. After pressing and separation from the presses, the run-off juice is racked into new French oak barrels for 10 to 12 months. The wine is racked from the barrels and kept in vats for 1 month for natural clarification. It is then bottled without filtration.
