To be enjoyed at 16°C with grilled lamb, a chicken tagine or aged cheeses


A “green harvest” is carried out in June, allowing the yield of the plots to be reduced and therefore the quality of the grapes to be increased. The bunches are harvested at the end of September at perfect maturity. The berries are separated from the stalks by destemming before being put in vats for a maceration of 10 to 15 days. Pumping over and aging extract the best from the skins before pressing. The aging is done partially in barrels of 225 liters before bottling.
