Winemaking

The harvest takes place when the berries have reached their optimum maturity and is exclusively manual. As soon as they arrive at the cellar, the grapes are immediately delicately pressed in order to obtain the best juices. Part of the juice undergoes static cold settling for 48 hours. Part of the must is vinified in barrels while the other part is vinified in thermo-regulated stainless steel vats to preserve the freshness and fruitiness of the wine. Temperature control helps preserve the freshness and integrity of the aromas. After a light fining, the wine is bottled.
