The vineyard covers 86 communes in the Pyrénées-Orientales and 9 communes in the Aude. The soils consist mainly of granitic and gneissic arenas as well as brown and black shales but some red calcareous soils.

Custody and Service Tips

To be enjoyed as a liqueur at the end of a meal or with duck foie gras terrine, Roquefort cheese, aged parmesan and with desserts made with nuts, cherries and chocolate

Winemaking

The white grape varieties are vinified by fermenting the musts in the liquid phase after pressing. For the reds, the must is macerated in contact with the skins. Mutage stops the action of the yeasts before they have been able to transform all the sugar into alcohol. This is how the Rivesaltes retain some of the natural sweetness contained in the fruit. The undergrowth aging is done in tuns, demi-muids or barrels. They will continue a slow maturation that lasts more than fifty years.
