Picpoul
Already recognized before the reign of Louis XIV, it was in 1618 that the botanist Magnol in his book Sylve Plantarium reported Piquepoul among the most famous grape varieties of Languedoc. This limestone terroir bordering the Mediterranean Sea, offers a fresh and dry white wine.

    This wine goes wonderfully with shellfish (Mouclade Charentaise, stuffed clams) and shellfish, but also with fish (pan-fried eels, Sétoise rouille)...


    Winemaking

    In order to minimize the risk of oxidation, the grapes are harvested at the time of day when the temperatures are coolest (night and early morning) and they are sent to the cellar as quickly as possible. The bunches are immediately pressed in a pneumatic press.

    The must is then fermented, which takes place at low temperature (16 and 18°) to preserve the aromas as much as possible. The wine is aged in stainless steel vats on fine lees before being bottled in the spring.
