Benefiting from a semi-arid Mediterranean climate with a mild winter variant, the vineyard enjoys exceptional climatic conditions, both in terms of sunshine duration, the quantities of heat stored during the day by the limestone soils and released at night to the grapes, and through the effect of the Mediterranean Sea, which tempers thermal variations, and the altitude, which moderates the summer heat. Two soil types contribute to the generosity, aromatic complexity, tonicity and freshness of this cuvée: the marly-limestone soils of the Gargasian, at the foot of the cliff, rich in fossils, which provide the vines with a water supply throughout the summer despite the absence of summer rainfall; and the red Mediterranean soils of the Barremian, formed on compact blue-grey limestone reclaimed from the garrigue, enabling the production of rich and concentrated wines. This vineyard was designed to achieve an optimum level of quality: the selection of vines at planting, the North-South orientation of the rows for better light capture, and the qualitative Cordon de Royat training system. Yields are moderate, at 35 to 40 hl\/ha, and the grapes are ripe, healthy and concentrated, allowing easy extraction of colour and aromas during fermentation and maceration, thanks to a slow ripening process. The grapes are harvested by hand and transported to the winery in harvest bins. A portion of the Syrah is vinified using carbonic maceration. The Grenache, Mourvèdre and Carignan are destemmed and placed in temperature-controlled stainless steel tanks for traditional macerations of 20 to 25 days. The different grape varieties are vinified separately.
