The harvest is triggered on the basis of ripeness checks, analysis of polyphenols contained in the grape skins, and daily tasting of the berries as harvest approaches.\nPicking healthy, ripe grapes is the essential first step to achieving a high level of quality.\nThe harvest is manual, and the grapes are brought to the winery in small crates within the hour.\nThe grapes are sorted and then destemmed before being placed in temperature-controlled vats.\nEach grape variety is vinified separately.
