Winemaking & aging
The grapes are harvested at perfect maturity at night to take advantage of the cool temperatures and express the optimal potential of the grape varieties. A meticulous sorting of the harvest is carried out upon receipt of the grapes. The work of the grapes takes place under neutral gas in order to mitigate the risks of oxidation of the musts. The grapes are destemmed, cooled to 8°C and sent to the press to extract the must. Particular attention is paid to pressing so as to keep only the most qualitative and least colored first juices. The juices are then decanted more or less according to the desired aromatic profile. The fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. The musts are vinified in thermo-regulated stainless steel vats at low temperature in order to preserve the freshness and integrity of the aromas. The particularity of Grenache lies in its very fragile color and the finesse of its aromas and its Mediterranean character. The Syrah brings a bluish color to the blend as well as the freshness and tension of the cuvée. After a light gluing, the assembly is carried out. The wines are then aged on fine lees to preserve their fresh and fruity character until bottling.
Tender, pale and brilliant rosé with bluish reflections evolving over time on more nuances orange. The nose offers fruit aromas red, blackcurrant and gooseberry. Marks floral notes of rose and notes of citrus, grapefruit complete this palette. The mouth is fresh and round, the final saline and balanced.
Food & Wine Pairing
Ideal as an aperitif with fish rillettes, prawns and whelks, tapenade. Also goes well with dishes from the world cuisine: couscous, curries, aioli, specialties Asian and Italian.
