Chardonnay Sauvignon Blanc

Choosing Change is a civic act that supports committed winegrowers. It is also the guaranteed pleasure of intense and fruity wines, with a gourmet and generous palate.

Winemaking & aging

The grapes are harvested at perfect maturity at night to take advantage of the cool temperatures and express the optimal potential of the grape varieties. A sort meticulous harvesting is carried out upon receipt of the grapes. Work of the grapes takes place under neutral gas in order to mitigate the risks of oxidation musts. The grapes are destemmed, cooled to 8°C and sent to the press to extract the must. Particular attention is brought to the pressing in such a way as to keep only the first juices more qualitative. The juices are then more or less settled according to the desired flavor profile. The fermentations last between 15 and more 30 days depending on the degree of clarification and the temperature applied. The musts are vinified in temperature-controlled stainless steel vats at low temperature (16°C), in order to preserve the freshness and integrity of the aromas.

Tasting notes

The color is pale yellow. The nose is powerful and complex, with aromas of flowers white, acacia, and citrus fruits such as grapefruit and lime. In the mouth, this wine is fresh and fruity, unctuous and fat, with flavors of honeysuckle, passion fruit and spices. It presents a beautiful liveliness and a nice finish, full of freshness and tension.

To be enjoyed at 12-13°C as an aperitif or with mussels from Oc marinières, with a fish soup, whites of poultry in cream as well as cheeses soft
